Literature References: A purified multienzyme produced by the microorganism Aspergillus oryzae (Ahl.) Cohn, Aspergillaceae, grown on sterilized wheat bran or on rice hulls. Represents more than 30 different enzymatic functions. It is not only amylolytic but digests proteins and fats also.
Properties: Whitish-yellow, very hygroscopic powder. Converts 450 times its wt of starch into maltose. Keep tightly closed.
Use: Preparing the Japanese national drink "sake"; in converting maizes into sugar in manuf of whiskey.
Therap-Cat: Amylolytic.
