Literature References: A fatty oil found in coffee beans to the extent of about 15% (dry basis). Byproduct in the manufacture of instant coffees. Obtained in 2.7% yield by petr ether extraction of green Santos beans after previous dewaxing with tetrachloroethane: Schuette et al., J. Am. Chem. Soc. 56, 2085 (1934). Coffee oil seems devoid of linolenic acid, however positive tests for linoleic (25.66%) and oleic (12.36%) acids were obtained.
Properties: Greenish-brown oil. Odor characteristic of green coffee beans. d2525 0.9653. nD25 1.4790. Iodine no. (Wijs) 100.72. Saponification no. 195.53; Reichert-Meissl no. 0.36. Saturated acids 33.60%. Unsaturated fatty acids 38.02%. Unsaponifiable matter 12.63%.
